Hi!
I'm looking for some easy crock pot soup recipes that ladies would enjoy. It can be light or creamy - doesn't have to be a hearty man-style soup. We are planning on serving 100 (hopefully) ladies at our women's conference. I'm looking for something that would be tasty, easy to prepare, and not have us peeling potatoes, or deboning chickens for hours on end the day before. I thought crock pot would be good, because we could toss the ingredients in the night before.
This soup will just be a small cup served along side a salad topped with grilled chicken.

I don't have a recipe but I can tell you my lazy way of making soup.
Beef stew
frozen vegetables (whatever you variety you like)
V8 juice
seasonings - beef buillion, bay leaf, garlic, oregano (basically whatever I have on hand and strikes my fancy at the time)
Put in crockpot and let simmer all day. Most recipes call for browning the beef in oil first but I never have time to do that. I just throw it all in the crock pot and let simmer.
You can also use fresh or canned vegetables if you prefer and add rice or pasta. _________________ ~Jodi |

It probably wouldn't make sense to serve this, since you are serving chicken over your salad. However, it is very easy to make and is soooo yummy! Maybe for when you want something with a spicy flair!
Slow Cooker White Chili (from "The Dinner Doctor"
3 cans (15 oz each) Great Northern beans, drained
2 cups shredded cooked chicken (can use rotisserie)
1 cup chopped red bell pepper
1 cup finely chopped onion
4 cloves garlic sliced
1-4 oz can chopped green chiles, with liquid
1 Tbl ground cumin
1 tsp dried oregano
1/2 tsp salt or 1 chicken flavored bouillon cube
2-14.5 oz cans chicken broth
2 cups tortilla chips
sour cream, for serving
Place the beans, chicken, bell pepper, onion, garlic, chiles, cumin, oregano, salt and broth in a 4 1/2 to 6 quart slow cooker. Stir to combine. Cover the cooker and cook the chili until bubbling, the ingredients have cooked down and the liquid has thickened, 4-5 hours on high or 8-10 hours on low heat. Serve tortilla chips as a garnish. Spoon chili into bowls and serve with sour cream on the side for a topping. |

Hi!
This recipe called for peeling & cooking of sweet potatoes, but I substitued canned yams & it worked out great.
INGREDIENTS:
3 sweet potatoes, peeled and sliced -- SUBSTITUTE canned yams
2 cups chicken broth
1 teaspoon sugar
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
salt to taste
1 1/2 cups light cream, half-and-half, or milk
PREPARATION:
Put sweet potatoes and broth in a pot, cover and heat through. Mash them with your mixer or blender, then pour into crock pot. Add remaining ingredients. Cover and cook on high 1 to 2 hours.
Serve hot or chilled with a dollop of sour cream or crushed pecans if desired. Makes about 1 quart.
I played around with it. I substituted brown sugar for white which made it yummy, and I substituted Pumpkin Pie spice for the cloves & nutmeg (because I forgot to pick up the cloves & nutmeg at the store!) I left out the salt because it just didn't seem right to add salt to yams. I even made a pot without using chicken broth...I just used the juice that was in the can of sweet potatoes & it tasted even better to me. I thought I'd give you the original recipe & then tell you how I tweaked it. That way you have both ideas.
The best thing about this soup is that you can mix it all up ahead of time & store it in the fridge. Then, just pour it into the crock pot a few hours before serving. I mixed up mine a day or two before the luncheon.
We served it in bread bowls. It was a fall luncheon, so it went over well. We also served salad like you're planning.

Hi Stacey
I was reading about your soup that sounds good, but how do you do your bread bowls. I have a luncheon tea every February for the widow ladies at church. I have always wanted to do bread bowls but I am not sure how to go about doing it. Any suggestions would be great.
