| Does anyone have a good basic marinade for chicken? My husband doesn't like it when I use Italian dressing for the marinade, so I haven't been grilling much chicken. Any ideas? |

This is a really simple marinade, but delicious:
mix soy sauce and Italian dressing in equal amounts. Marinade for a few hours, but no longer than overnight or it will get too salty. You can grill it, bake it, or put in the Crockpot. I've done it all 3 ways and it's wonderful no matter what!  |

| Both ideas sound great! No, I've never tried using Catalina. It's my husband's favorite dressing, so he'll love the flavor. Thanks also for the soy sauce/Italian idea. I think chicken will be on the menu tonight. |

I saw this recipe on Paula Deen's show the other day. It sounds good to me so I went to the website and copied the recipe. I can't say that it is tried and true yet but will surely try it in a few days and let you know how it tastes!
1 chicken, cut in half
Salt and pepper
Grilling sauce, recipe follows
Season cut up chicken with salt and pepper. When coals are white, spread them out for even heat distribution. Place chicken pieces on the grill with larger, fattier pieces (such as the thigh) near the center and smaller pieces to the outside. Brush grilling sauce on chicken through the cooking process and turn chicken as needed. Move chicken toward the outside as the leaner pieces (such as the breast) get done. Brush with grilling sauce just prior to removing from grill. Serve warm.
1 cup Worcestershire sauce
8 tablespoons (1 stick) butter, melted
2 lemons, juiced

I said that I would let you all know how this grilling sauce tasted when I tried it. Well, I grilled some chicken the other day using the grilling sauce and we really liked it. I basted the chicken with it often while grilling.

I found this recipe a few years back in one of those Saturday inserts that they do in the USA Today papers. It is wonderful.
Honey Grilled Chicken Breasts
1/4 cup fresh orange juice
3 tablespoons honey
2 tablespoons fresh lemon juice
1 tablespoon peeled, minced fresh ginger (I use a sprinkle of dried)
1 tablespoon minced garlic
salt and pepper to taste
6 boneless, skinless chicken breasts
Combine all marinade ingredients in a bowl. Add chicken and toss well to coat. Cover and marinate in frig for 4 hours or overnight, turning occasionally. Bring to room tem before grilling. |
