Veggie Pizza

2 - 8 oz. pkgs. refrigerated crescent rolls
2 - 8 oz. pkgs. cream cheese, softened
1 cup mayonnaise
1 - 1 oz. pkg. dry Ranch dressing mix
1 c. fresh broccoli, chopped
1. c. sliced baby carrots
1 c. shredded cheddar cheese
½ c. green onions, sliced
green or black olives, if desired

Preheat oven to 375°. Roll out the crescent dough onto 9x13 in. baking sheet and pinch edges together to form the pizza crust. Bake crust for 12 min. Let cool 15 min. without removing it from the baking sheet.

In a small bowl, mix cream cheese, mayo and dry Ranch dressing. Spread mixture over cooled crust. Arrange veggies over the cream cheese layer. Garnish with olives if desired. Chill for one hour, slice and serve.

Mmmmmmmmmmmm, I LOVE Veggie Pizza!!

This is a recipe given to me by a pastor's wife who is friend of mine. She served it at out Christmas party last year and it was so good. My teen son ate and ate them.

RITZ DELIGHT

Boil in microwave:
1 can Eagle Brand Milk
8 oz. Chopped Dates

Stir in:
1 cup pecans

Line cookie sheet with Ritz Crackers. Place a small amount of mixture on each cracker. Bake 5 minutes in 350* oven.

Mix icing:
2 - 3 Tbsp. cream cheese
1 cup conf. sugar
2 Tbsp. margarine
1 tsp. vanilla

Top each cracker with icing.

Spinach dip is one of my favorites and it is so easy to make

2 boxes of frozen choopped spinach
1 (8 oz) brick of Philidelphi cream chees
1 bag of Parmesean chees (shredded) (8- 16 oz is fine)
1 bag of either Montery jack, parmasean, swiss, colby, cheedar cheese. It doesn't matter for the second bag of cheese just choose one bag. I prefer a combination bag myself, such as a italian or mexican style.
1 (8oz) jar of hellmans mayo
green onion (to taste)
Black pepper (to taste)

Thaw out spinach and squeezes the dickens (and water) out of it.
mix everything together and nuke it in the microwave ontil all the cheese is melted . Take out and stir every few minutes. It takes about 5 - 10 minutes in the microwave.

serve with Nacho chips or bread. I know it sounds gross with the spinach in it , but you don't taste it. My kids love it and boy it is sure to clog arteries with all the cheese.
