Did you know that you can make your own fresh butter - the real stuff, which you are allowed to eat on a low carb diet (but can't have the biscuit or potato to go with it).
Fresh Butter
Put one cup of heavy cream in a pint jar. Shake by hand for about 15 minutes. The butter will go through several stages so don't stop too early. When it is solid you will be left with a small amount of liquid in the jar- milk.
I love fresh butter! And this is a neat thing to do with children at Thanksgiving. _________________ God Is Good All The Time. . .

Cream Cheese Pumpkin Dessert
12 oz. Philadelphia Cream Cheese
3 large eggs
2 c. pumpkin
1/2 c. Splenda
2 tsp. cinnamon
1 tsp. allspice
Beat together the cream cheese and pumpkin. Add the eggs and then
the remaining ingredients. Bake in a 9 X 9 inch baking dish at 350
for 30 - 40 minutes (until knife comes out clean).
My husband isn't crazy about cream cheese but if you love cream
cheese you might use more.
It is really good served warm with a bit of French Vanilla Cool
Whip.

Hi Startrek,
Good luck with the diet. Here's another cheesecake recipe for you. I loved this! I'm going to try a peanut butter one also. I'll post it if it turns out okay. Just a word of caution - this is a no-no during induction.
No-Bake Cheesecake
1 4 oz. package of sugar-free gelatin (flavor of your choice, I used Strawberry Kiwi.)
2/3 c. cold water
1/3 c. flavored, carbonated water (or increase the cold water to 1 cup)
12 oz. cream cheese, softened
1/2 c. sour cream
In a saucepan sprinkle gelatin over the cold water. Let set 1 minute and then over low heat stir 1-2 minutes, until gelatin is dissolved. Remove from heat and stir in carbonated water.
Beat together cream cheese and sour cream. Stir in the gelatin and mix well. Chill until set. _________________ God Is Good All The Time. . .

Hi Barbara Jean -
Here we are day 3 of Atkins and I'm already going into dessert withdrawals!! LOL No, I'm just kidding, we're doing pretty well actually. But it would be nice to have a "dessert" I can fix for us on special occasions or when we have company. Thanks a bunch for these!
Any others would be soooo appreciated.

Pat had a knee replaced thislast fall and i had a back injury almost 2 yrs ago now... we both are pouinding on the pounds!!!
