| Any ideas for breakfast foods I can prepare ahead of time for our teen prayer breakfast? I have to drop off the food at the church on my way to work in the morning. Thanks for your help! |

I had a recipe for a breakfast casserol that was fabulous. I will go into my sewing room/office and dig through the clutter (If you don't hear from me in a few days they may have to send in search and rescue parties ) I'll come up with something. _________________ ysiHn&l;

| Muffins or a fruit tray would be easy and could be made/put together the night before. |

I FOUND IT.................though a little longer than I had hoped (Had to clean out my sewing/computer room) Very Scary!
Ok here we go; I was served this at a Ladie's Christmas "Tea".
Breakfast Casserole
1 5 1/2 oz. pkg frozen potatoes and onions (I think some producers call them potatoes O'Brian?)
4 TBS butter
1/4 cup flour
1/2 tsp salt (after heart surgery and considering that the ham is salty I would omitt this)
2 cps milk
1 cp sour cream (low/no fat works)
2 TBS snipped parsley
8 1/4 inch thick slices of Canadian bacon (I have substituted ham)
8 eggs
Prepare potatoes according the pkg directions and set aside. In sauce pan melt butter, add flour, salt pepper and milk at once. Cook and stir until thick and bubbly. Remove from heat. Stir in sour cream, parsley and potatoes. Turn into a 13x9x2 inch baking dish. Arrange meat in rows overlapping slightly. Bake uncovered at 350 degrees for 20 minutes. Remove from the oven. Make a depression on each piece of meat and slip on egg ito each depression. Return to the oven and bake until the eggs is cooked. The eggs must go on last. Cook eggs until the yolks are completely cooked and not runny. Serves, obviously, 8. Enjoy _________________ ysiHn&l;

THis is the best breakfast dish for church functions or company.
Ingredients
1 pkg of crescent rolls
8 eggs, small package of cooked bacon
1 1/2 cup of shredded cheese
9x13 pan.
Preheat the oven to 350. Greese the bottom of the pan, spread out the cresent rolls on bottom of pan. Next, in a medium mixing bowl beat eggs, add chopped up/cooked bacon, and cheese. Dash salt and pepper. Pour mixture over crescent rolls. Cook at 350 for 25-30 minutes. Yummy!!!! |
