Two recipes are in this post: twice baked potatoes and broccoli a la parmasana

Low-fat Twice Baked Potatoes

4 baked potatoes
2 egg whites
2 Tbsp. butter
1 Tbsp. Parmesan
1 tsp. olive oil
1 Tbsp. chopped onion
1/2 tsp. thyme
1/8 tsp. pepper
paprika (to top)

Slice 1/4" lengthwise off top of each baked potato. Scoop out pulp and place in a mixing bowl. Reserve the shells. Beat potatoe pulp with all ingredients except paprika. Return mixture to shells. Sprinkle with paprika, bake at 350° for 15 minutes.

** usually, I'm not too fond of low-fat recipes, but this is my favorite twice-baked potato. It's not too rich, but has very good flavor. **

Broccoli a la Parmasana

1 head fresh broccoli
dash garlic powder
dash oregano
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. olive oil (or can use Pam spray)
2 Tbsp. Parmesan

Wash broccoli and cut into 1 in. lengths. Cook until tender, about 15 minutes. Drain.
Sprinkle with oil, seasonings and cheese. Serve immediately.

**I don't usually like broccoli unless it's in soup, but this is the one way I'll eat it outside of soup!**

Maybe it's my German heirtage, but I love cabbage! I was sent this recipe and thought I'd place it here for any other cabbage lovers.

Fresh Cabbage and Cheese Casserole


1 large head of cabbage
1/2 cup butter
1/4 cup flour
1-1/2 cups milk
1/2 to 3/4 pound sharp cheese, grated
Browned bread crumbs
Butter

1. Coarsely shred cabbage (slicing disc of food processor
works well. I just chopped my fairly fine).
2. Steam or boil in small amount of water for 10
minutes. Drain well.
3. Make white sauce. Melt butter in saucepan. Add
flour and cook 3 minutes. Gradually stir in milk.
Cook until thick, stirring constantly.
4. Grease 3-quart casserole and layer cabbage, white
sauce, and cheese until all is used.
5. Cover with bread crumbs and dot with butter. Bake
at 350 degrees for 35 minutes.
SERVINGS: 12 - 16

Thanks so much for posting the Fresh Cabbage and Cheese recipe!!! My mother-in law made this recipe and my husband ABSOLUTELY loves it. He doesn't like cole slaw though. A few years ago my recipe box got "misplaced" and I lost ALL my recipes. Since then I have been able to replace almost all my lost recipes from my family but my mother-in law passed away before my box was lost and that recipe wasn't in with her recipes. My husband has been SOOO missing this delicious vegetable dish. I tried making it wihtout a recipe but it wasn't the same. Thank you so much. I'm going to surprise him with it tomorrow!!! Naomi
