Mmmm...Hot Cocoa and Sugar Cookies

I'm a lover of hot chocolate anytime of year, but as the leaves turn and air grows crisp, it is something that I enjoy to the fullest. Hope you will join me for a cup. Feel free to take all the marshmallows you want. They aren't made of sugar in the virtual world anyways you know!

If you're like me and you don't necessarily always want to make hot cocoa the old fashioned way, consider making your own mix. It saves from having to buy those boxes of packets that don't go very far. It's easy and makes a great gift in a jar for friends at the holidays too!


Hot Cocoa Mix


10 cups dry milk powder
1 3/4 cups unsweetened Hershey's cocoa power
4 3/4 cups sifted confectioners' sugar
8 ounces powdered non-dairy creamer

Using a large bowl, mix all ingredients thoroughly
with a whisk. Store in an airtight container.

To use: Take approximately 1/4 cup of mix,
plus 3/4 cup of hot water.





Sugar Cookies


3/4 cup butter (don't use margarine)
1 cup sugar
2 eggs
1 tsp vanilla (real vanilla extract not flavoring!)
2 1/2 cups flour
1 tsp. baking powder
1 tsp. salt

Mix flour, baking powder, and salt together and set aside. In a large bowl, cream together butter(softened), sugar, and eggs. Add vanilla. Slowly add dry ingredients.

Form dough into ball. Cover with plastic wrap. Refrigerate at least 30 to 40 minutes.

Lightly flour surface. Roll out dough and cut into shapes.

Preheat oven to 400 degrees. Bake cookies for 5 to 7 minutes. Bake just until bottom starts to brown ever so lightly. Remove promptly from oven and place on cooling racks.

Please note: It is important not to overbake. Because of the high oven tempature, they will continue to bake for a minute or two after removing them from oven.
